Looking back on my Instagram feed earlier today, i realised i don’t think i have had Oxo roast potatoes since September! Well, it had to be remedied straight away.
If you haven’t tried them, they are lovely, I have to remember ‘portion control’
Par boil your potatoes until nearly cooked through.
Add to your roasting pan with a bit of frylight.
Make up your Oxo stock and pour over the potatoes until it is halfway up the potatoes.
Cook in a hot oven and turn halfway through cooking. Once the stock is sucked up by the potatoes they go brown and crispy. If you want them extra crispy add more frylight and increase the heat in your oven for the last 5 minutes.
